650S : Valet Mode/Speed Control

So first time I played with Valet Mode. As I understand it - it is supposed to limit the cars speed (?) and lock the bonnet/engine area. So - after enabling Valet Mode - the appropriate areas was locked, but I could do unlimited speed (certainly well above 30MPH). I thought Valet Mode limited the speed of the vehicle by default....

Is valet mode speed settable? If so - how? And if so - is that speed dedicated to Valet Mode (in other words - I don't have to set up the speed...
